Vegan Galaxy Donuts

Blue spirulina makes for vibrant galactical donuts perfect for your morning breakfast. Serve with tea and coffee and be a hit at the office.

1 cup all-purpose flour

1/3 cup granulated sugar

1 1/2 teaspoon baking powder

1/2 teaspoon salt

2 tablespoons vegetable butter, melted

¼ cup + 1 tbsp apple sauce

1/3 cup+1 1/2 tablespoon almond milk

1 teaspoon vanilla extract

1 ½ cups dairy-free vanilla yogurt

1 tbsp blue spirulina

Sprinkles, optional



Preheat oven to 350°F (175C). Spray donut mold with non-stick spray and set aside. In a large bowl mix flour, sugar, baking powder and salt. In a smaller bowl, mix vegetable butter, apple sauce, almond milk and vanilla. Mix the wet ingredients into the dry. Pipe our pour the batter into the donut cavities until ¾ full. Bake for 8-10 minutes or until cooked through. Allow to cool on a wire rack. In a small bowl combine yogurt and spirulina. Dip each donut into mixture then add sprinkles.
