Ultimate Feel-Good Pitaya Bounty Bites
Sometimes, you just want something sweet, creamy and comforting. These chocolate pitaya bounty bars are the ultimate feel-good treat. They will leave you in absolute bliss as they melt away, and they're completely vegan, and free from refined sugar. Try them, you'll thank us later.
INGREDIENTS
(serves 6-8 people)
1 1/2 cup Grated Coconut (200g)
3 tbsp Agave Syrup
2 tbsp Coconut Oil
1 tbsp Pink Pitaya Powder
20 medium dates, or 15 large medjool dates (pitted)
1 heaping tbsp smooth peanut butter (no added sugar)
300g of your favorite vegan dark chocolate
A pinch of salt
INSTRUCTIONS
Start with the Pitaya Bounty Layer: Blend the grated coconut, agave syrup, pink pitaya powder and 1 tbsp of coconut oil for a few seconds, until sticky and evenly pink. Spread on a baking tray lined with baking paper (use a small tray, or a rectangular tupperware if you're making a small portion) and place in the freezer.
While the pink bounty cools, prepare the PB caramel: Chop the pitted dates and boil them in 1 1/2 cup water on medium/high heat, during 10 minutes. Take off the fire and let cool for a few minutes. Add the peanut butter, a small pinch of salt and blend until smooth.
Take the pink bounty out of the freezer and spread the PB caramel evenly on top. Place in the freezer for about 30 minutes, to allow the layers to harden.
Once hard, cut the caramel/bounty into squares. Melt the chocolate with 1 tbsp coconut oil, and prepare the square bites in cupcake molds.
Alternatively, spread the melted chocolate on top of the caramel layer, and place the bites in the fridge for 30 minutes to allow them to harden.
